Carrot Cake Recipe With Cream Cheese Frosting

Carrot Cake Recipe

1.5 cups sugar.
2 cubes melted margarine. (not too hot)
3 eggs.
1 tablespoon cinnamon.
1/4 teaspoon ginger.
1/64 teaspoon nutmeg. (small dash)
1/64 teaspoon groung cloves. (small dash)
1/64 teaspoon allspice. (small dash)
1 teaspoon vanilla.
1/4 teaspoon salt.
1 teaspoon baking soda.
2 cups flour.
6 grated carrots. (about 3 to 4 cups)

Beat well - sugar, margarine, and eggs.
Mix in well - spices, vanilla, salt, and baking soda.
Fold in flour then fold in carrots.
13x9 inch pan or two 8x8 inch pans.
350 oven for about thirty minutes or until toothpick comes out clean.

Cream Cheese Frosting

Two eight ounce packages of softened cream cheese.
3/4 cup sugar.
1 teaspoon vanilla.

Beat well then spread over cooled cake.
